You can tamp it as straight as you like, but if you don’t level it first, the coffee in the middle will be much more compact than around the edges.
When I (Hugo) started working with a bottomless portafilter, I saw the results: water flowed faster along the sides, leading to inconsistent and sour coffee.
I decided to delve into this and look for a tool to level the ground coffee before I began tamping. I soon discovered the concept of a coffee distributor or espresso leveler.
