The Weiss Distribution Technique (WDT) is a preparatory step in the brewing process. Using the Weiss Distribution Tool or WDT Tool, you stir through the ground coffee in your portafilter. A dosing funnel or dosing ring prevents you from pushing coffee over the edge of your portafilter. By stirring, any clumps are broken up, and the coffee is evenly distributed. The result is less channeling, more even extractions, and thus a better espresso!
The Barista-Essentials WDT tool has 6 replaceable needles with a diameter of 0.35mm. These are perfectly spaced to remove clumps from your ground coffee and distribute it evenly. Other WDT tools are often made with acupuncture needles, which can be very painful (believe me, we have tried them). Our “needles” are flattened, so you won’t accidentally give yourself an unwanted acupuncture treatment.

Preventing channeling with the Weiss Distribution Technique
For a perfect espresso, an even distribution of ground coffee is crucial. Clumps in the ground coffee prevent water from flowing through the coffee properly (channeling). This disrupts the even flow of water trough your coffeepuck, leading to poor extraction. The aromas in the coffee bean don’t fully develop, resulting in too much acidity or bitterness in your espresso.
